Chickpea Breakfast Scramble

Pressed for time in the morning and looking for a quick, but nutritious breakfast option to add to your repertoire? This Chickpea scramble is the PERFECT addition!

Serves 2


  • 1 15oz can chickpeas

  • 1 tsp turmeric

  • 1 tsp nutritional yeast

  • ½ tsp salt

  • ½ tsp pepper

  • 1/4 cup white onion, chopped

  • 2 cloves garlic, minced

  • Drizzle of extra virgin olive oil


  1. Drain chickpeas, but save a little bit of the liquid, called aquafaba.

  2. Mash chickpeas in a bowl with a bit of the aquafaba, leaving about half of the chickpeas whole, and mix in turmeric, salt and pepper until combined

  3. Heat pan over medium heat and drizzle with olive oil

  4. First, saute the onion until it becomes translucent. Then add the garlic and saute until it becomes pungent

  5. Add in chickpeas, mix well with the onion and garlic and saute for another 5 minutes

  6. Assemble your bowl! Add your chickpea mixture over a bed of greens, top with minced cilantro, and add a side of avocado!
