Vegan Chorizo & Potato Tacos

Every day is #tacotuesday in my book and more often than not, it should be celebrated with these bad boys!
After trying (and not liking) the Trader Joe's Soy Chorizo in a stew I made several weeks back, I was determined to find a more delicious use for it. I took it back to the basics, kept it simple, and decided tacos were the way to go.
The nice thing about this recipe is that it really doesn't require much work or seasoning. Because the chorizo is so flavorful, you don't have to do anything to it. The only part of the dish that required a bit of attention were the potatoes and I only used a light sprinkle of taco seasoning.
As far as the chorizo mixture, it's totally delicious as is, but if you feel like kicking it up a notch and increasing the overall nutritional value of the meal, try adding some black beans in addition to the cruciferous blend! Bare in mind, this will increase your overall portion, so you will more than likely be able to get out more than 8 servings. Grab an extra pack of corn tortillas just in case!

Serves 8-12


For the tacos...
  • 1 pack Soy Chorizo

  • 3 large red potatoes, peeled and diced in to bite size cubes

  • 1 packet cruciferous blend

  • 1 small onion, diced

  • 1-2 pack(s) corn tortillas (or other tortillas of choice)

  • 1 can black beans, drained and rinsed *optional

  • 1-2 Tbsp taco seasoning

For garnish...
  • 2-3 avocados

  • 2-3 limes

  • 1 pack Multi-color radishes (these add such a nice crunch!)

  • 1 bunch Cilantro

  • Green Dragon hot sauce (Get you some! This stuff is amazing!)

*All ingredients were found at Trader Joe's. How's THAT for a one stop shop?!?!


  1. Add potatoes to a large pot, cover with water, and bring to a boil. Cook potatoes until tender, but not soft enough to fall apart (about 10-15 minutes). Drain potatoes.

  2. Heat olive oil in a large skillet over medium heat. Add the potatoes, season with taco seasoning, and cook for roughly 5 minutes on each side, or until brown and crisp,

  3. While the potatoes are cooking, heat another pan over medium/high heat and add olive oil (or water).

  4. Saute diced onion and cook until translucent, roughly 4-5 minutes.

  5. Next, add the entire pack of Soy Chorizo, stir to combine, and cook for 2-3 minutes.

  6. Finally, add as much or little of the cruciferous blend as you'd like! I tend to add a lot because I like to increase the nutritional value as possible! Remember, it will cook down, so don't be afraid to load that pan up! Once the veggies cook down, this is the best time to add your canned beans!

  7. Once finished, warm your tortillas, whether in the microwave or on the stove then build your tacos!

  8. Garnish with your favorite toppings and enjoy!
