It's that time of year again and I know we're all craving simple, delicious vegan comfort foods, am I right?
I am completely obsessed with meals that require little effort and minimal cleanup. This usually translates to a bit of chopping and just one pot. So, without further adieu, check out this easy veggie lentil soup.

Ready in 55 minutes
2 Tbsp EVOO
1 Shallot, diced
1 Small white onion, diced
3-4 Garlic Cloves, minced
2 carrots, diced
5 small white potatoes, cubed
1 can fire roasted tomatoes, diced
1 cup green lentils, picked through and rinsed
1 small bunch kale, chopped
8 cups vegetable broth
Salt and pepper to taste
Heat EVOO in a large pot and saute the carrots, onion, shallot, and garlic over medium heat. Once translucent, add a sprig of fresh rosemary and saute until pungent
Add the rest of the ingredients, except chopped kale, bring to a boil, then reduce heat to simmer. Cook for 30 minutes, or until lentils become tender.
Add chopped kale 5 minutes before soup is finished, season to taste and serve!
