BBQ Jackfruit Sandwiches with Kale Slaw

Who says you can't make plant based soul food!? If you ask me, this is the TRUE definition of "soul food!" Not only does it taste good, but it is truly good for you!

Serves 4-6


For the Jackfruit

  • 2 20-ounce cans green Jackfruit (Found at Trader Joe's)

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 1 tsn smoked paprika

  • 1/2 tsp chili powder

  • 1/2 tsp liquid smoke

  • Salt and pepper to taste​

  • 1 cup BBQ sauce (Make sure its vegan!)​

For the kale avocado slaw
  • 2 cups cruciferous blend (From Trader Joe's)

  • 1/2 ripe avocado, mashed

  • 1 Tbsp maple syrup

  • 2 Tbsp hemp seeds (Optional)

  • 2 Tbsp lemon juice

  • Salt and pepper to taste

  • Water, to thin

For serving
  • 4-6 whole grain vegan buns (I like using Gluten Free Galaxy vegan and gluten free buns)

  • Optional toppings: grilled pineapple or extra avocado


  1. Drain and rinse Jackfruit. Some people like to cut off the core portion of the fruit, but I leave it on!

  2. Coat the Jackfruit in your seasonings and set aside.

  3. In a skillet over medium heat, heat a little water or oil. Add onion; cook for 5 minutes, or until tender. Add garlic; cook for another minute.

  4. Add the Jackfruit, BBQ sauce, and 1/2 cup water. Stir and cover; turn heat down to medium-low. Cook for 15 minutes, stirring occasionally. Add a bit more water if needed. Cover and cook for another 15 minutes

  5. While the Jackfruit simmers, make your kale slaw by combining all the ingredients and adding to your kale slaw mixture. Toss and keep in the fridge until serving time.

  6. Using two forks, shred the Jackfruit. Add more BBQ if desired.

  7. Dress your buns, starting with Jackfruit, then your slaw, and then finally adding additional toppings of your choice!

  8. Store leftovers in the fridge and consume within 2-3 days
