Some days you just need a burger...in my case, that's most days...but, if today is that day for you, you're in luck, because this burger recipe is going to curb that craving of yours!
Ready in 60 minutes (or less)
1 heaping cup cooked & mashed sweet potato (About 1 large sweet potato)
1 15oz can cooked black beans, rinsed and drained
1 cup cooked brown rice (or sub quinoa)
1/2 cup walnut meal (or finely chop walnuts)
1/2 cup panko bread crumbs (or sub oats)
1/2 cup diced white onion
2 1/2 tsp ground cumin & chili powder
1/2 tsp sea salt (plus more to taste)
3 Tbsp BBQ Sauce (I use the Siracha BBQ Sauce from Trader Joe's)

Vegan cheese like the Follow Your Heart sliced pepper jack cheese
Veggies of choice for topping such as mixed greens, lettuce, tomato, avocado, pineapple, or pickles
Additional BBQ sauce or make your own special sauce with Veganaise (the vegan version of mayo) + BBQ sauce or Ketchup
Cook quinoa or brown rice and let cool.
Preheat oven to 400 degrees, cut sweet potato in half and massage with olive oil. Place face down on a foil lined baking sheet. Bake until the sweet potato becomes soft and you can pierce is easily with a fork. Remove from oven and set aside.
Saute onion until they become slightly brown. Set aside.
Add black beans to a mixing bowl and mash with a fork or potato masher. Leave about half of the black beans in tact. Next, add sweet potato (skin removed) and mash together with the black beans. Add in sauteed onion, walnut meal, and spices, and combine well. Taste mixture and add more seasoning if needed. I often sprinkle in a bit more sea salt and some fresh cracked pepper. If the mixture is too moist add in a bit more bread crumbs or oats. It should be moldable and hold its form.
Heat lightly greased grill top or pan over medium-high heat
Form burger patties with hands. Adjust size according to the size buns you have. Also keep in mind that the thicker the burger, the longer it will take to heat through! Thin patties are great, because you can double them up if you're feelin' froggy!
Cook burgers until they are browned or charred on each side. Once they are nearly finished, add cheese and let it melt.
Serve between buns or atop a salad with toppings of choice
Store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze them for later use!
