The tuna fish sandwich is a class lunch time option, but is easily recreated vegan style! This fish-less option is sure to have your taste-buds exploding!!

Serves 4
Ingredients
1 can (14 oz) chickpeas
Juice of 1/2 lemon (+ a bit of zest if you like)
3 – 4 tablespoons vegan mayo (or hummus)
1/2 cup celery, chopped
1/2 cup red onion, chopped
1/2 teaspoon garlic powder
Sea salt & cracked pepper to taste
Dash of cayenne, optional
Bread of choice (or you could put mixture in to a wrap or atop a salad)
leafy greens & sprouts
Preparation
Drain and rinse chickpeas, add to a medium size mixing bowl, and mash with a fork until about half of the chickpeas are mashed
Add the remaining ingredients and mix until its well combined (You could also add all the ingredients to a food processor and pulse until desired consistency)
Serve chilled as a sandwich, wrap, or salad!
*Other additions include pickles, tomatoes, dijon mustard, and pumpkin seeds
